A creamy layered dessert made with quark, yogurt, mascarpone, and fruity raspberries – easy to prepare and perfect for guests. The combination of frozen berries, light and airy cream, and a touch of chocolate makes this dessert in a glass a fresh and delightful treat. Depending on the season, it can also be varied with other frozen fruits.
Whip the cream:Whip the cream until stiff and set aside.
Mix the cream:In a large bowl, mix plain yogurt, low-fat quark, mascarpone, lemon juice, and sugar thoroughly using a hand mixer or stand mixer until smooth and creamy.
Fold in the whipped cream:Carefully fold the whipped cream into the yogurt mixture.
Layer the dessert:Transfer the quark cream into a piping bag to layer it neatly into the glasses. Start with a layer of the cream mixture, then add the frozen raspberries on top. Continue layering and finish with another layer of the cream.
Decorate:Decorate with dark chocolate shavings and fresh raspberries.You can decorate right after layering or shortly before serving – whichever you prefer.
Cooling:Refrigerate the dessert for at least 4–6 hours (ideally overnight) so the raspberries can thaw and everything can set properly.

I usually prepare the dessert in the morning – it’s perfect to enjoy in the evening. Preparing it the day before works just as well.This dessert is very easy to vary: Instead of raspberries, you can also use other frozen fruit - e.g. blueberries, strawberries, mango or a mixture of berries. The flavour can change slightly depending on the sweetness and acidity of the fruit.he cream can be layered especially neatly and evenly if transferred into a piping bag beforehand.Depending on the size of the dessert glasses, the quantity is enough for approx. 6-8 portions.
